Well worth the 06.30 start. Because now, a couple of hours later, we are sitting in a beautiful New Forest clearing. Warm in the car, surrounded by oak, I’m sipping my Wild Blueberry Spinach Smoothie. And I just had to share it with you; it would be rude not to.
I made it last night, (thank you Janet) and that’s a first. Not ideal nutritionally but…hey! it’s not a perfect world and weighed up against not having a smoothie to take with me and ending up with wheat and dairy for breakfast, it’s a no brainer.
Small with dark coloured flesh, these wild blueberries (that were called bilberries when I was a child) stain your teeth and lips for a short while. Worth it? You bet! They are jam packed with phytochemicals such as anthocyanin, and twice the antioxidants of regular blueberries.
Use any blender that you have but a Nutribullet smoothie cup with lid works brilliantly. Keep it in the fridge overnight, or the freezer, if you know you will have the time to defrost it.
- 2 chopped bananas
- 1 cup coconut water
- 1 tbs linseeds
- 1 tbs chia seeds
- a large handful of baby spinach
½ cup frozen organic wild blueberries (aka bilberries)
The whole berries (unblended) are a delicious contrast to the creamy texture of the smoothie. Keep cool till it’s time to take the lid off 😉
NB according to Anthony William, The Medical Medium, wild blueberries are the most amazing superfood for the brain, to be consumed daily. I get mine from our local health food shop in bulk, so I have bags of it in the freezer.
